- 1 cup brown rice flour
- 1/2 cup sorghum flour
- 1/2 cup almond flour
- 1/3 cup tapioca starch
- 1 tbsp psyllium husk or xanthan gum
- 1 packet instant yeast (2 1/4 tsp)
- 1 tbsp olive oil
- 1 tsp apple cider vinegar
- 1 tsp salt
- 1 tbsp honey (optional)
- 1 1/4 cup warm water
Instructions
- In a large mixing bowl, combine all dry ingredients: flours, starch, psyllium husk, salt, and yeast.
- In a separate bowl, whisk warm water, olive oil, vinegar, and honey.
- Pour wet ingredients into dry and mix until smooth. The batter will be thick but not kneadable like traditional dough.
- Transfer into a greased loaf pan and smooth the top. Let rise in a warm place for 45–60 minutes until slightly domed.
- Preheat oven to 375°F (190°C). Bake for 40–45 minutes until golden brown and firm.
- Let cool completely before slicing.
Notes
Best enjoyed within 2–3 days or sliced and frozen. Add herbs or seeds to customize. Letting it cool fully is key to structure.
