A hearty, sliceable gluten-free bread made with brown rice, almond, and sorghum flours. Soft, moist, and perfect for sandwiches or toast!

Ingredients

  • 1 cup brown rice flour
  • 1/2 cup sorghum flour
  • 1/2 cup almond flour
  • 1/3 cup tapioca starch
  • 1 tbsp psyllium husk or xanthan gum
  • 1 packet instant yeast (2 1/4 tsp)
  • 1 tbsp olive oil
  • 1 tsp apple cider vinegar
  • 1 tsp salt
  • 1 tbsp honey (optional)
  • 1 1/4 cup warm water

Instructions

  1. In a large mixing bowl, combine all dry ingredients: flours, starch, psyllium husk, salt, and yeast.
  2. In a separate bowl, whisk warm water, olive oil, vinegar, and honey.
  3. Pour wet ingredients into dry and mix until smooth. The batter will be thick but not kneadable like traditional dough.
  4. Transfer into a greased loaf pan and smooth the top. Let rise in a warm place for 45–60 minutes until slightly domed.
  5. Preheat oven to 375°F (190°C). Bake for 40–45 minutes until golden brown and firm.
  6. Let cool completely before slicing.

Notes

Best enjoyed within 2–3 days or sliced and frozen. Add herbs or seeds to customize. Letting it cool fully is key to structure.
