Ingredients

  • 2 cups grated zucchini
  • ½ cup gluten-free flour (or almond/oat flour)
  • 1 egg (or flax egg for vegan)
  • ¼ cup chopped green onions (or shallots/chives)
  • 1 clove garlic, minced (or garlic powder)
  • Salt, to taste
  • Oil, for pan-frying

Instructions

  1. Grate zucchini and sprinkle with salt. Let sit for 10 minutes.
  2. Use a clean towel or cheesecloth to squeeze out as much liquid as possible from the zucchini.
  3. In a mixing bowl, combine zucchini, gluten-free flour, egg, garlic, and green onions. Mix well.
  4. Heat a bit of oil in a skillet over medium heat. Drop spoonfuls of batter into the pan and flatten slightly.
  5. Cook 3–4 minutes per side until golden and crisp. Remove and drain on paper towels.

Notes

Serve with dips like avocado crema or spicy hummus. Make them vegan by using flax egg. For max crispiness, don’t skip squeezing out the zucchini moisture.
