- 1 cup coconut cream (or any vegan whipping cream)
- 1/4 cup powdered sugar (or to taste)
- 1 tsp vanilla extract

Instructions
- Prepare the Flax Eggs: In a small bowl, mix the flaxseed meal and water. Let it sit for about 5 minutes until it thickens.
- Make the Cake Batter: In a large mixing bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt. In another bowl, mix the almond milk, coconut sugar, melted coconut oil (or vegan butter), flax eggs, and vanilla extract. Combine the wet and dry ingredients and gently fold them together until smooth. If you’d like a chocolaty flavor, you can add cocoa powder to the mix.
- Bake the Cake: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Pour the batter onto the baking sheet and spread it evenly. Bake for 15–20 minutes or until a toothpick inserted into the center comes out clean. Be sure not to overbake, as the cake needs to stay soft for rolling.
- Cool and Roll: Once the cake is done, let it cool for about 10 minutes. Then, carefully roll the cake in a clean kitchen towel while it’s still warm (this will help it hold its shape). Let it cool completely in the towel.
- Prepare the Frosting and Filling: While the cake cools, beat the coconut cream with powdered sugar and vanilla extract until it forms soft peaks. This will be both the filling and frosting for your Yule log.
- Assemble the Yule Log: Unroll the cooled cake and spread a generous layer of the frosting on top. Carefully re-roll the cake, making sure it’s snug but not too tight. Place it seam-side down on a serving platter.
- Frost and Decorate: Once your Yule log is rolled, cover it with the remaining frosting. Use a fork to create a bark-like texture on the frosting. Melt the dairy-free chocolate chips and drizzle them over the top for added decoration.
- Chill and Serve: Let the Yule log chill in the fridge for at least 1 hour to set. When ready to serve, slice and enjoy this decadent gluten-free vegan Yule log!
