Bright, tangy, and naturally gluten-free, these lemon blueberry bars combine a soft almond flour crust with fresh blueberries and lemon zest. Perfect for parties, brunches, or a wholesome dessert.

Ingredients

  • 1 cup almond flour (or oat flour for nut-free)
  • ½ cup coconut oil (or vegan butter/ghee)
  • ⅓ cup maple syrup (or agave/honey)
  • 2 eggs (or flax eggs for vegan)
  • 2 tbsp lemon juice + 1 tsp zest
  • 1 cup fresh blueberries (or frozen)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix almond flour, coconut oil, and maple syrup to form a dough. Press into the pan and bake for 10 minutes.
  3. In a separate bowl, whisk eggs, lemon juice, zest, and a bit of maple syrup. Fold in blueberries.
  4. Pour mixture over the crust. Bake for 20–25 minutes until edges are golden and center is set.
  5. Let bars cool completely, then chill for 1 hour before slicing.

Notes

Chill the bars before slicing for cleaner edges. Add a dusting of powdered sugar or fresh mint for garnish. These can be made vegan by using flax eggs and coconut oil.
