- 1/2 cup dark chocolate chunks – substitute: vegan chocolate chips
Instructions
- In a blender, combine coconut milk, cherries, cocoa powder, maple syrup, and vanilla extract. Blend until smooth.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Fold in dark chocolate chunks once the mixture reaches a soft-serve consistency.
- Transfer to a freezer-safe container and freeze for 4–6 hours or until firm.
Notes
For extra flair, top with chopped almonds, fresh cherries, or a swirl of cherry compote. Serve in gluten-free cones or make ice cream sandwiches using dairy-free cookies.
