Ingredients
Scale
- ¼ cup chia seeds
- 1 cup unsweetened almond milk (or coconut, oat, or soy milk)
- 2 tablespoons cocoa powder (or cacao powder)
- 1–2 tablespoons maple syrup (or agave, date syrup, or honey)
- ½ teaspoon vanilla extract (or almond extract)
- ½ cup fresh or frozen cherries, chopped (or raspberries/strawberries)
- 2 tablespoons dairy-free chocolate chips (or chopped dark chocolate)
Instructions
- In a medium bowl or jar, whisk together almond milk, cocoa powder, maple syrup, and vanilla extract until smooth.
- Stir in the chia seeds and mix well to prevent clumping.
- Fold in chopped cherries and chocolate chips.
- Cover and refrigerate for at least 4 hours, preferably overnight, until thickened.
- (Optional) Stir the pudding after 15–30 minutes to ensure even seed distribution.
- (Optional) Blend the mixture before chilling for a smoother texture or layer with extra cherries for a parfait.
Notes
Top with extra cherries, dairy-free chocolate shavings, coconut whipped cream, or granola. Serve in jars with mint for gatherings. Stores well refrigerated for up to 5 days. Can be sweetened with mashed banana instead of syrup.
