  • ½ cup fresh or frozen cherries, chopped (or raspberries/strawberries)
  • 2 tablespoons dairy-free chocolate chips (or chopped dark chocolate)

Instructions

  1. In a medium bowl or jar, whisk together almond milk, cocoa powder, maple syrup, and vanilla extract until smooth.
  2. Stir in the chia seeds and mix well to prevent clumping.
  3. Fold in chopped cherries and chocolate chips.
  4. Cover and refrigerate for at least 4 hours, preferably overnight, until thickened.
  5. (Optional) Stir the pudding after 15–30 minutes to ensure even seed distribution.
  6. (Optional) Blend the mixture before chilling for a smoother texture or layer with extra cherries for a parfait.

Notes

Top with extra cherries, dairy-free chocolate shavings, coconut whipped cream, or granola. Serve in jars with mint for gatherings. Stores well refrigerated for up to 5 days. Can be sweetened with mashed banana instead of syrup.
